Capparelli Artisan Pasta, founded in 2021 in Belfast, is born from a deep passion for authentic, handcrafted pasta. Our journey began with a vision to share the tradition of Italian pasta-making far and wide, elevating the art of pasta craftsmanship.
We love to innovate and take pride in working with only the finest ingredients, sourcing our flours directly from farmers in Italy, Britain, and Ireland. This commitment to quality ensures that every batch of our pasta embodies the authentic flavors and craftsmanship that define our brand.
In 2023, we were honored to be finalists at the prestigious Blas na hÉireann Irish Food Awards, and in 2024, we were awarded 2 stars at the Great Taste Awards

How do we make our pasta
Bronze die: In our pursuit of excellence, we employ a time-honored artisanal method known as bronze die extrusion to create our pasta, eschewing the commonplace Teflon dies favored by commercial producers. This meticulous process involves passing the dough through bronze dies, a practice deeply rooted in tradition and revered for centuries in Italian pasta-making culture. The result? A pasta with a distinctive, rough, and porous texture that not only captures the essence of authenticity but also serves as an ideal canvas for sauce absorption, ensuring a more flavorful dining experience. This age-old technique isn't just about tradition—it's about elevating the sensory journey of pasta consumption, infusing each bite with a richness and depth of flavor that can only be achieved through time-tested craftsmanship and dedication to quality..
Drying Process - Slow and Low
Our Slow and low drying pasta process is a meticulously crafted traditional Italian pasta method that epitomizes the essence of artisanal pasta making. Instead of rushing the drying process, we adhere to the time-honored practice of slow drying, which involves carefully regulating the temperature to a maximum of 38°C.
This gentle approach ensures that our pasta retains its optimal texture and flavor while allowing the flavors to develop fully. It's a labor of love that spans up to 24 to 30 hours, during which each batch of pasta undergoes a gradual transformation, resulting in a superior product that delights the senses and captures the true essence of Italian culinary tradition. The slow, gentle drying process helps preserve the natural characteristics of the durum wheat semolina while giving the pasta its signature al dente texture and nutty flavor.

Aligned with our commitment to sustainability, PRIME TERRE® is a controlled and certified supply chain project. It is dedicated to ensuring the sustainability and protection of the territory, guaranteeing the genuineness and local origin of the ground wheat grains. This initiative is focused on guaranteeing the sustainability, quality, and traceability of the intire wheat supply chain.
Traceability
The durum wheat flour that we use to make or Classica and Integrale pasta range is controlled and certified by CSQA, a certification body that operates worldwide in the food industry, public administration, public, social, and sanitary services, tourism, and service industries.
Our Premium Pasta Collection
Classica: Our flagship pasta is made from 100% Italian durum wheat which are specially selected and sourced through the Prime Terre Project, which focuses on sustainability, quality, and traceability. This ancient wheat is grown in regions like Puglia, Tuscany, Sicily, and Campania.
Integrale: Our whole wheat pasta is crafted from whole grain durum wheat flour, incorporating all parts of the grain: the bran, germ, and endosperm. Compared to refined pasta, this type retains more natural fiber, vitamins, and minerals, making it a healthier choice. The presence of bran and germ gives whole wheat pasta a denser texture and a nuttier, more robust flavor.
Einkorn (Ancient British Grains): Our einkorn pasta is made from ancient organic einkorn wheat grains, which originated over 20,000 years ago in the Middle East. We source the flour from a mill in the Cotswolds, England.
White Spelt (Ancient British Grains): Our white spelt pasta is made from an ancient grain closely related to emmer, providing a delightful nutty flavor. We source the flour from a mill in the Cotswolds, England.

Capparelli Artisan Pasta has proudly collaborated with Wildfarmed to create a unique, high-quality pasta using their Dark Brown Flour. Wildfarmed flour is produced through regenerative farming practices, which prioritize soil health, biodiversity, and sustainable farming methods. By avoiding chemical inputs and industrial farming techniques, Wildfarmed flour supports the environment while offering enhanced nutritional benefits, retaining more of the natural nutrients like protein, fiber, and vitamins due to its stone-milling process.
Our new pasta, crafted with a blend of Wildfarmed’s regenerative flour and Capparelli’s prime Italian semolina, is not only delicious but also reflects our commitment to sustainability and quality.
