The einkorn is ancient grain is a predecessor of durum wheat and was one of the earliest cereals cultivated by humans. It is believed to have originated over 20,000 years ago in the Middle East. Currently, we procure our Organic Einkorn flour from a mill in the Cotswolds, England. The semolina we use is 100% Italian durum wheat, specifically selected and sourced through the Prime Terre Project, which emphasises sustainability, quality, and traceability. This ancient wheat is grown in regions such as Puglia, Tuscany, Sicily, and Campania.

Also referred to as 'casareccia' in certain regions of Italy, casarecce is a type of short pasta characterized by its curled edges and a central groove. The term "casarecce" translates to 'homemade', reflecting its traditional preparation method of rolling small rectangles of dough around a thin wooden pin or metal rod known as a 'ferro' in Italian.

Originating from Sicily, casarecce has garnered popularity throughout Southern Italy. As such, it pairs exceptionally well with sauces rooted in Southern Italian culinary traditions, featuring quintessential Mediterranean ingredients like eggplant, tomatoes, cheese, and basil.
